Recipes for Sunday Dinner at Serenity Acres

I would like to share some recipes for one of our favorite Sunday dinners here at Serenity Acres.
Southern Fried Chicken:
3 large eggs                      1 whole chicken(cut into 8 pieces
2 cups self-rising flour      vegetable shortening for frying
Salt and pepper
In a shallow bowl, lightly beat eggs with 1/3 cup of water. In a separate bowl, combine 1 teaspoon pepper. Lightly season chicken with salt and pepper. Dip the chicken in egg mixture and then in the flour. Making sure you coat it well.
In a skillet, melt the shortening over med/high heat until it melts and reaches 350 degrees. Make sure you have about 2 inches of melted shortening. Add chicken and cook until browned and crisp. For dark meat about 13 to 14 min. and whit meat 8 to 10 min.

Braised Collard Greens:                          2lbs collard greens(remove stems) and cut into 1/2 inch
8 slices bacon                                          strips
1 sweet onion(thinly sliced)                    salt
8 tablespoons butter                               hot sauce(optional)
In a large saucepan, cook the bacon until crisp. Add the onion and butter, cook until onion is tender.
Add 2 cups of water and bring to boil, reduce heat and simmer 10 min. Add collard greens and cook uncovered about 20 min. Collard greens should be soft. Season with salt and optional hot sauce.

Buttery Mashed Potatoes:
(serves 4)
13/4 lbs white potatoes                                 2 teaspoons salt
cut into chunks                                              1/2 teaspoon black pepper
1/2 cup half and half                                     
4 tablespoons butter or margarine
In a large pot cover potatoes with cold salted water. Bring to boil and cook until the potatoes are tender( approx. 20 to 25 min.) Drain the water and while potatoes are still hot, mash with potato masher, add the half and half, butter,salt and pepper.

We either have cornbread or biscuits with the dinner. I hope you enjoy it. It is one of our favorite Sunday dinners.

My son's Tennesee Walker

This is my son's Tennesee Walker. His name is Mouse. He has lived here at Serenity Acres for 7 years. He is part of our family.

Pablo & Vision

These are my other 2 Arabians, Pablo & Vision.. They have been with us for many years. Pablo was only 1 year old when we got him! He is the one with the white blaze. Vision is the bay.

Welcome Home Azia

This is my new horse Azia. She is a beautiful black Arabian mare. We are so happy she finally came home to our farm!

Welcome to Serenity Acres Farm

Serenity Acres farm is located in a small rural town in Southeastern, IN. We reside here with our 4 horses ,Pablo- a half Arabian gelding, Vision- a Polish Arabian mare, Mouse- a Tennesee Walker,and our latest horse, Azia, who is a black Arabian mare. We also have 2 ponies, Peanuts and Popcorn, and 3 goats, Cappy,Pepee, which are full size Nubians and Cinnamon Buns is a Mini Nubian. We also have 2 Golden Retrievers- Goldberg and Adin and a cat named Nemo.
I run a small country consignment store, called Abbey's Touch of Country. I sell  and consign handmade craft items, primitives, candles and much more. My future plans include, breeding Nubians and Mini Nubian goats, making handmade goat milk soaps and lotions.
This is just an introduction to our farm. In later posts, I will add pictures of our farm, animals, and my store.
